Superfood Salad
Ingredients:
2 Bunches of Kale
½ Cup of Cooked Quinoa
¼ Cup of Raisins
¼ Cup of Cranberries
6 Whole Beets (Remove Skin & Roast)
3 Mandarins (Peal & Divide Into Sections)
1 Ripe Avocado
¼ Cup of Olive Oil
3 Tbsp. of Orange Muscat Champagne Vinegar
Salt and Pepper
Instructions:
Combine the kale, almonds, raisins, cranberries, and quinoa in a bowl, then whisk the olive oil and the vinegar together, then drizzle over the salad, then toss it.
Cut the beets into bite-size pieces, then add the beets and mandarin oranges to the salad. Cut the avocado in half, then remove the pit, and remove the avocado from the skin, then cut into bite size pieces and add these to the salad. Season with salt and pepper and enjoy.
